Knife skills and the importance of quality blades in my kitchen have been an ongoing project of mine over the last two years. I get a great amount of satisfaction from not only being able to show my friends the quality of knife they could be using but also their importance to safe and easy cooking. However, these blades need upkeep and while a honing steel does the trick, over time they need a little more work.
I chose to get a whetstone because I knew I would need one in the near future to compliment my honing steel. This is the first whetstone I've bought. I was referred to this brand and this specific stone via a couple of popular foodie and knife channels that I follow (shout out to Jun's Kitchen). Wow.
I was apprehensive that I didn't get the right grits, but they worked a charm. Straight out of the box I knew I was going to test it on a badly damaged blade belonging to my flatmate - it had several small chips. I took my time getting comfortable and then had at it in the way I'd observed others doing it. Twenty minutes later I was done. Not only was my friend's knife edge now completely repaired, it was sharper than it had been in almost a decade.
I gave it back to him this afternoon and he was stunned.
The KING 1000/6000 grit is the latest addition to my knife and cooking hobby, and it has quickly become probably my favourite and the most rewarding task I've had in a while!
